
Fried Rice Ingredients
4c cooked rice
2 boneless skinless chicken breasts
4 tbsp butter (divided)
2 tsp minced garlic
3 eggs
1 package of frozen mixed peas + carrots
4 tbsp soy sauce
Garnish: Green onions + sesame seeds (optional)
Wonton Ingredients
1c cooked, shredded chicken (I use the chicken from my crockpot/IP chicken recipe, however, you can also use rotisserie or store bought pre cooked shredded chicken)
1 package of wonton wrappers
8 oz cream cheese (softened)
1 c pepper jack cheese
1 tsp garlic powder
7 sprigs of fresh chives or 4 green onions (chopped)
Vegetable oil (to fry)
Directions for Fried Rice
I start by making the chicken – I do not do anything fancy for this, I simply season both sides with a little salt and pepper and cook for about 5 min per side in a skillet with oil and garlic (I eyeball both of those). Remove from heat and set aside. Cook rice according to the directions on the package/box.
Chill in refrigerator until you’re ready to use it. Add 1 tbsp + the minced garlic to skillet with frozen peas and carrots along with the garlic and cook for 2-3 min. While this is happening, you can slice your chicken that’s been sitting off to the side into chunks.

Push to one side once that is done and add your eggs. Cook and scramble, then stir together with the peas and carrots. Add rice + chopped chicken back to the skillet and add the rest of the butter.

Add soy sauce and stir everything until well combined. Add salt and pepper to taste, garnish with green onions + sesame seeds (optional).
Direction for Wontons
Shred the chicken into smaller pieces or use a food processor to get them a little more fine. Add both cheeses and chicken together in a mixing bowl along with the seasonings and green onion. Take about a tablespoon size (I usually just eyeball) of the mixture and place into the center of the wonton. Now, for the folding, there are truly a handful of ways to fold a wonton. You can YouTube or Google, but I like just bringing all of the sides up (almost like a flower) and sealing them by dipping my fingertip in water and running it along the edges.

Once that’s done, heat about 1-1.5 in of oil in a skillet to about 375 degrees. Cook each wonton for about 1 minute until golden brown. Having our new Our Place Fry Deck makes frying foods like this so convenient!!! Place on paper towels once removed from oil + heat to help remove any excess.

Serve with your favorite spicy or sweet sauce. Enjoy!
