Ingredients
1 lb of italian sausage (or if you prefer ground beef/chicken)
(2) 15 oz cans of diced tomatoes
32 oz container of chicken (or vegetable) broth
1 bag of frozen tortellini
8 oz cream cheese
1 bag of frozen spinach
Parmesan cheese to garnish/stir in at the end
Directions
Cook your (chopped) meat over medium heat until brown and drain. Add sausage, broth, tomatoes, and cream cheese to the crockpot and give it a good stir. Cook on low for 4-4.5 hours until the cream cheese is melted. At this point, stir in the tortellini and spinach and cook until the pasta is no longer frozen (about 20-30 min). Serve immediately. TIP: the tortellini will continue to cook if it is left in the hot crockpot (even if it’s turned off), so I recommend moving it to a serving or storage bowl (especially if you have left overs!) My kids love this one and it is SO easy!
