My kids’ recently discovered a love for bacon – not sure if that’s a good or bad thing, but in moderation I think it’s totally okay. Bacon is delicious after all, and if you want to substitute turkey bacon you definitely can!
Ingredients
Sesame buns (toasted, if desired)
1 lb bacon
1 ranch packet
4 oz cream cheese
1 1/4 c colby jack cheese
4 green onions (chopped)
1 whole tomato (sliced in rounds)
Kettle chips (optional, as a side)
Directions
Cook your chicken until done – and then remove from crockpot/IP and shred in a *clean* bowl. I do this with my instant pot or crockpot – you can find that recipe here.
Add cream cheese, green onion, colby jack cheese, and ranch seasoning packet to the bowl with your shredded chicken and mix until well combined. Add salt and pepper to taste.
Toast your sesame bun and add a heaping spoonful of chicken mixture to the bottom bun. Add two or three slices of tomato, then 1 slice of bacon, and another small spoonful of the chicken mixture before adding the top bun. Serve immediately with some kettle chips (they taste yummy dipping into the chicken mixture too!)
