Being Italian, there’s really no pasta recipe I’m not obsessed with – but easy to make + YUMMY?! Sign me up! This one reminds me of summer + is refreshing with lemon and is literally only 5 ingredients (7 if you want to garnish yours with chili flakes and parm)! SO SIMPLE! I made this a bunch during 2020 and our quarantine time at home. It was cheap + really didn’t involve a lot of things that were short at that at that time, too. We ate so much of it, I gave it a little break, but am bringing it back now for summer + more time at home! Lord knows when the kids are home more in the next couple months, I’ll be needing a few easy week night dinners!
Ingredients
(2) 15 oz containers ricotta cheese
5 oz fresh spinach
1/2 freshly squeezed lemon juice
1 tsp minced garlic
16 oz angel hair pasta
salt and pepper to taste
optional garnish: chili flakes, parmesan cheese, lemon slices
Directions
Cook your angel hair pasta to package directions – reserving 1/4 c of pasta water. Add ricotta, garlic, lemon juice, and salt + pepper to a skillet over medium heat until everything is melty and mixed together. If it still seems a little thick, this is when I’ll add the reserved pasta water. Add your spinach and keep stirring until all spinach is coated and mixed into the sauce. Last, add angel hair back to the skillet or pot (whatever’s easiest) and incorporate so that everything is well combined. Serve immediately, garnish if you desire!
