Ingredients
1/2-2 lbs boneless skinless chicken
1 tsp salt + pepper (to add to chicken prior to adding to skillet)
1 package of cherry tomatoes
2tsp minced garlic
1 1/2 tbsp olive oil
1 1/3 c pesto sauce (you can buy it or make your own using my recipe here)
3 leaves of basil to garnish
1 c mozzarella cheese, divided
1/4 c Parmesan
Directions
Preheat oven to 375. Heat skillet over medium heat and add oil, garlic and seasoned chicken chicken. Cook for 3-5 min on each side. Let cool then chop into bite size chunks and put into a bowl. Chop tomatoes into quarters and add to the bowl with 1/2 c mozzarella, and pesto sauce. Combine together carefully and then transfer to baking dish. Use remaining mozzarella to top ingredients in baking dish and bake for about 10-12 min until cheese is bubbly and melted. Garnish with basil and Parmesan and serve.
