By now you’ve probably seen (or at least heard of) the viral air fryer eggs!!! I wanted to make them, but put my Italian spin on it!
The shape came out a little weird 😅 but they were SO yummy! Almost like an open faced omelette!
Ingredients
6-8 eggs
3/4 c mozzarella
Cherry tomatoes (sliced in half, eyeball measurement)
5 slices prosciutto
S + P
Basil to garnish
Parmesan to garnish
Directions
Start by lining your air fryer with parchment paper with a couple sprays of cooking spray. Crack each egg onto the parchment paper and whisk. Add in layers: prosciutto, mozzarella, tomato slices (I don’t use the whole package of cherry tomatoes, especially when they’re sliced in half! Just eyeball) and salt and pepper to taste.
Air fry for 15 min at 375. Depending on your air fryer it may need another 2-3 min. Garnish with basil and parm.
I sliced mine like a pizza – add a drizzle of balsamic vinegar if you want to add a little tangy kick!
