This is one that would be an easy “bring” for a BBQ gathering if you’re needing a new dip idea! Honey loves peaches, so I wanted to find a creative way to incorporate them in something new this summer.
Something that Hun has been loving lately is her knife/cutting set she got for her birthday. When she saw me getting the veggies out for this she immediately asked if she could help with her cutting board and tools!
Another thing that’s nice to have for this (but obviously not necessary!) is this veggie and fruit chopper. I got it while it was on sale a few months ago and it’s been a time saver for sure. It has two different blade inserts for a finer chop and also a little collector that’s attached – which is super helpful especially with salsa and salads.
3 yellow peaches (cut into 1/2 inch cubes)
1 jalapeno (up to you if you want to leave the seeds or not, I remove for my kids) diced
4 tomatoes, chopped
1/2 c cilantro, chopped (extra to garnish)
2-3 limes (juiced)
1/2 tsp sugar
Salt and pepper to taste
1/2 red onion, chopped
Directions
Rinse peaches and gently rub fuzz off of them while drying. Chop/dice tomatoes, peaches, jalapeno, cilantro and red onion and add to a bowl. Add juice from limes and add in the sugar, salt and pepper. Toss (gently) to combine everything together. Add additional juice/s+p as necessary. Serve with your favorite chips or with tacos!
