Ingredients
1 package of boneless pork chops
3 lb bag of red potatoes (chopped into quarters)
7 tbsp EVOO
3 tsp fresh garlic
1 packet of ranch seasoning mix
1 tsp dried parsley
1 tsp oregano
1tsp Salt and pepper (add more later to taste)
Instructions
Preheat oven to 400. Spray sheet pan with cooking spray and set aside. In a mixing bowl, add the ranch mix, olive oil, garlic, salt, pepper, oregano and parsley. Add potatoes to a new mixing bowl and drizzle on 3 tsp of the olive oil ranch mixture. Make sure all are coated then add to baking sheet and cook for 20 min (we usually let them go longer – 30 min because we like them crispy). Also make sure to give them a stir around half way through cooking.
While potatoes cook, grab your pork chops and add them into the bowl of the remaining olive oil ranch mixture. Make sure they are coated. Let them marinate while the potatoes cook.
Once potatoes are done, remove the sheet pan and push potatoes to both ends of the pan (so they’re divided in half and there’s a space in the middle). Add the pork chops to that space and cook another 10-15 min or until meat is fully cooked. The potatoes will continue to cook with them. Add more salt and pepper to taste, if desired. Plate and serve!
