Random fact about my family: every single one of us LOVES eggs, especially deviled eggs. I remember when C and I started dating and I quickly found out on our first holiday together how much he loved deviled eggs, haha. Since having our own minis, they’ve all acquired this love, too.
This year I wanted to spice up our regular deviled egg recipe attempt it 2 different, out of the box ways. The first one is a cream cheese, cucumber and everything bagel egg and the other is a chicken and chive egg. To make both at once, you’ll want to hard boil your eggs like you normally do and scoop out all of the hard yolks put 3in one bowl and 3 in another bowl.
Ingredients
6 hard boiled eggs
2 tbsp cream cheese
3 sprigs of chives (halved)
3 pieces (*sliced thin*) deli chicken
2 tbsp mayonaise
1 tsp (divided) apple cider vinegar
1 tsp (divided) dijon mustard
salt and pepper to taste
everything but the bagel seasoning
1 tbsp cucumber (finely chopped)
Directions
Halve all of you eggs and set aside, and put 3 yolks in 1 bowl and 3 yolks in another. Start with one bowl with the 3 hard egg yolks. Mash them until they’re a soft consistency and add 1/2 tsp of apple cider vinegar, 1/2 tsp dijon mustard, and 2 tbsp mayo. Mix until everything is well combined. Scoop in the mixture in 6 of the halves. Take a piece of the sliced chicken and twist it a little (so it’s somewhat spiral) and add to the top of each egg along with the chive sprig. Top with salt and pepper to taste.
Take the bowl with the other 3 hard egg yolks and mash them until they’re a soft consistency. Add the rest of your dijon mustard (1/2 tsp), apple cider vinegar (1/2 tsp), and cream cheese. Mix everything until it’s well combined, adding a little salt and pepper to taste. Scoop the mixture into the rest of the eggs (should be 6 left) and add a pinch of your chopped cucumber on top. For the final step, add a shake of the everything but bagel seasoning to the top.
The cucumber and bagel seasoning ones were a complete home run with my 4 and 1 year old this year! I lost count at one point of how many they ate 🤣 Hope you enjoy this little deviled egg change up!
