Ingredients
1 head of broccoli, chopped in florets
2 tbsp minced garlic
16 oz box or package of your fave pasta * I use Paccheri
5 tbsp room temp salted butter
1/3 c olive oil
1/2 c walnuts (rough chop)
1 tsp paprika (smoked, if you don’t have it, regular is fine)
Salt/pepper (eyeball)
Parmesan (garnish)
Directions
- Cook pasta to directions on package. Before you drain, take 1/4 cup of pasta water out (you’ll use this in the sauce) and put to the side. Chop broccoli into florets, making sure they’re the same size (bite size).
- Heat 2.5 tbsp of butter over medium heat. Stir butter consistently for 3-4 minutes until it is sizzling and butter is golden brown. Add walnuts and olive oil. Cook until walnuts are golden brown, about 2-3 minutes.
- Next, add broccoli, spices, and garlic. Sautee for about 5-6 minutes from here. Add pasta water and remaining butter to sauce.
- Combine the pasta with the sauce in the same skillet if there’s room, or take the pot the pasta is in and drizzle the sauce over it.
- Remove from heat and serve. Add parmesan to garnish. Enjoy!
