Make sure you use a food processor for this! Here’s my tiny but mighty (pink!) one. No nuts added into this pesto!
Ingredients:
2 c fresh basil
1/2 c grated parmesan cheese
1/4 c olive oil2 garlic cloves
Eyeball salt + pepper to taste
Instructions:
basil, remove stems. Place everything in the food processor (I add the basil first and then kind of layer everything on top). Pulse until you have the thickness/consistency you want.
Great w/pasta (obviously! I love pesto ravioli), but I really love it in my chicken bake (also an original to me recipe!)
Also really yummy on top of fish or as your pizza sauce. You can freeze this and make ahead of time. Take an ice cube tray, pour pesto in and then pop in the freezer until solid. Once it’s nice and frozen, remove and place into a freezer safe ziploc bag or container. Not digging basil? You can also leave it out and substitute for a kale, red pepper, or spinach pesto instead!Tag me if you make it!
