Disney's in the Desert

Spooky Festive Food

October 9, 2021

I’ve shared these in years past on IG and received a ton of feedback so I thought I’d compile them all and share them to the blog! I hope it provides some inspiration and ideas for your next gathering or just to have a fun eats night with your family!

Every Oct 1st, I try to make a ‘spooky’ inspired dinner + dessert (small treat) – usually really simple with things I already have on hand! Last year we did pumpkin quesadillas (no pumpkin involved! just the pumpkin shape!), mummy pizza, and bats for dessert!

Mummy Pizza
•bagel or english muffin
•jarred marinara/red sauce
•string cheese (or shredded mozzarella – the string cheese makes it more ‘mummy-ish’!)
•black olives

Bats
•Reeses peanut butter cups
•Oreos
•icing pen
•candy eyes
Dissemble Oreo cookies, take 1 end of the cookie and break it in half to make 2 wings. Use icing pen as ‘tacky glue’ to place wings onto the body (Reeses cup) and eyes.

Spiders
•Reeses peanut butter pumpkins (assortment of sizes- I’ll buy a bag of the small ones and then buy the larger ones individually)
•pretzel twists
•candy eyes
Turn pumpkins upside down. Break pretzels apart to form legs (I usually don’t do all 8 just because I try and save time, but to make them more realistic, you can!) Add candy eyes.

Spooky Popcorn (I eyeball everything- sorry! You can do more or less to your family’s liking)
•1 bag of your popcorn of choice
•Several cups of salted pretzel sticks
•<1/4 cup of yellow + orange M+Ms
•<1/4 cup of candy corn
•<1/4 cup of candy eyes
•1 1/2 cup of peanut butter chex
•1 brick of white chocolate (melted)
•OPTIONAL: seasonal/festive sprinkles! I found a fun ‘monster mix’ with Halloween colored sprinkles at HomeGoods and threw it on top last year.
Place all of the ingredients in a large mixing bowl *EXCEPT for white chocolate and candy eyes* and carefully stir to combine. Take the mixture and spread it evenly on parchment paper or aluminum foil. Melt chocolate per package instructions and drizzle it over the mixture evenly. Top with candy eyes and (optional) festive sprinkles.

Mummy Pretzel Snaps
•1 bag of snap pretzels (NOT butter)
•1 brick of white chocolate
•Candy eyes
Melt chocolate to package instructions, lightly drizzle white chocolate while its still hot in a horizontal motion making it look like mummy wrappings. Place candy eyes on while still hot!

Frankenstein + Halloween Colored Pretzel Rods
•1 bag of large pretzel rods
•2 packages of white chocolate
•1 package of assorted color food coloring (make sure there’s green in there!)
•Black icing pen
•Candy eyes
Melt chocolate to package instructions, add in food coloring to make the green for Frankenstein. Use icing pen to attach eyes and add black hair! For the rest, I just made different color chocolate and drizzled and mixed them up to make spooky combos!

Graveyard Scene Brownies
•1 box of brownies (or you can make from scratch!)
•10 oreos (crushed up)
•Ghost Peeps
•Icing pen
•Milano cookies
Bake brownies, let cool. Add crushed oreos (for the ‘dirt’), add milano cookies and write RIP (tombstones) and add ghost Peeps on top! SO simple!

Donut Vampires
(I purchased Krispy Kremes the morning of but you can grab whatever- I think glazed are best!)
Add vampire teeth and candy eyes – even more simple lol

Spooky Baked Ziti
•1 lb. Italian sausage (whatever type your family likes, we usually do mild)
•Your favorite marinara/red sauce
•1 lb. ziti
•15 oz. ricotta ($1.69)
•1 cup Italian cheese blend
2 cups shredded mozzarella
•1 package of mozzarella balls
 •Black olives

Brown the sausage in a large skillet until it’s brown and crispy on the edges.
Add the marinara/red sauce skillet with the sausage and stir to combine. Place a lid on the skillet and allow it to simmer. Once simmering, turn the heat down and allow it to continue to simmer while you cook the ziti. Stir the sauce occasionally.
After sauce is cooking, start the ziti. Bring a large pot of water to a boil, add the ziti, and cook to package instructions (usually 8-9 min).

For cheese filling:
Add the ricotta, Italian cheese blend, and some freshly cracked black pepper to a bowl and stir to combine. Begin to preheat the oven to 350ºF.

After draining the ziti, return it to the pot and add 1 cup of the red sauce. Stir to combine pasta with sauce.
Then pour half of the ziti to a 9×13″ baking dish. Add half of the ricotta mixture on top of the ziti in small dollops. Finally, spoon half of the red sauce and sausage over the pasta and ricotta. Repeat these layers with the second half of the pasta, ricotta mixture, and sauce. Once that’s finished, top with 2 cups shredded mozzarella.

Cover the baking dish with foil – bake for 20 min
After 20 min, remove the foil, and turn the oven on to broil for 5 min, or just until the cheese is a little brown.
Add mozzarella balls staggered, cut a tiny piece of the black olive as a pupil. Serve with salad or garlic bread!

Boys’ Room Makeover Reveal

October 5, 2021

AHHH!!!! I’m so so excited to share this with everyone today! Around Feb/March when we were finishing up Honey’s big girl room, we started talking about revamping the boys’ room for them. If you’re new, we have two boys: Conner (8) and Cole (6). They’ve been sharing a room for the last 4 years and while I absolutely loved their room (I’ve had the best time decorating it over the years and adding little touches here and there), it was definitely time to give it a refresh and incorporate what they’re wanting/needing since they are getting older. It was Conner’s room first, when we bought our home in 2014 and the little car decals were one of the first things we put up to make it a ‘big boy room’ for HIM. He was almost 2 and had started jumping out of his crib so we knew it wouldn’t be long before he was in a bed and transitioning away from a ‘nursery’.

It wasn’t their choice to share (they were so young and Honey would be needing Cole’s nursery) but they’ve never once complained. Sure, they argue, but they are the best little buds and truly enjoy sharing their space for now. I’m pretty sure if they were in separate rooms they would sneak into each others to be together because that’s just how they are.

The photo below is what their room was previously – they had a bunk bed which was a great space saver since it’s not a huge room, and then my husband DIY’d a fort around it with pvc piping, dowels, and store bought curtains. It was something they’ve enjoyed and had fun in until the day we took it down, but as they’re growing their interests are shifting and they had been asking for, “separate beds, right next to each other”. I found these frames on a steal of a deal back in March and scooped two of them up. We let them pick the theme (they agreed to Star Wars) and some of the decor accents I had been shopping for at Hobby Lobby…they have a great selection of SW stuff in store! I created a vision board with other things I had found on Amazon and went with that and slowly it all started coming together. Their previous room was black, white, and gray and I wanted to keep some of that for them since we wouldn’t be changing their bedspreads (from my fave shop, Beddy’s – you can use the code ANGDISNEY to save 20% off sitewide! We’ve been using Beddy’s since Conner was 3.5) but Conner had also requested blue so I knew I’d be incorporating that as an accent color.

I got lucky and found this Star Wars peel and stick wallpaper which just so happened to be white + gray with pops of light blue! We purchased 4 rolls to do their accent wall and then bought the letters for their names separately at Hobby Lobby. We spray painted them a royal blue color and added them above their bed. C also grabbed these strip lights and attached them to the backside of the frame and with the remote control (that they come with) they can switch them on and off and change through a variety of colors. It has definitely made one of the most exciting updates for them in this new space!!!

Tall Dresser | Light | Wallpaper
Moon Lamp

Let me back up for a minute though. We had shown them their bed frames and wallpaper online to get their approval, and as I mentioned they had a hand in picking a few of the decor items at Hobby Lobby, but other than that, the entire thing was a SURPRISE! My husband had the idea of asking my mom to have them over on a Friday night after school and stay until Sunday early evening so that we could cram in almost 2 full days of refreshing while they were gone. We picked out a date in May that would work for Gammy and finalized our plans. The video below is their reaction to coming home finding their room was entirely revamped and changed – it’s something I know I’ll rewatch each year because their excitement about it fills me up so much. It was better than Christmas morning! Honey also got really excited too and was thrilled to be hanging out with her bros in their new room.

Hooded Towels

They LOVE their Big Joes – this was an item my husband picked out and was definitely part of the surprise. The boys love gaming so we figured it’d be fun for them to sit here (next to each other!) in their chairs and play. We also made the executive decision to gift them a TV for this space – their previous room did not have one, but they have shown us how responsible they are the last 15 mo+, we decided to try it out for them. They do have restrictions and limits, and since installing it back in May, they have respected those boundaries.

Chair | Light Decal | Frames | Vadar Bank
Bookshelf | Blue Bins | Clock
Funko Pop Yoda

Their old shared dresser from IKEA was replaced with two tall standing chests. We got these tall dresser chests as an alternative for them, and I love that they’re a little lighter in color with the dark pull accents. They are super sturdy/well made. I was hesitant to get rid of their dresser because it was divided equal between them and served them really well, but we knew to free up space we’d need to ditch it (it’s also been with us since before Conner turned 2, so it was falling apart and had seen better days). The tall chests allow more freed up space, and since we purchased 2 of them they still each have their own drawers for uniform pants, underwear, socks, etc.

Beds | Bedding | Blue Throw Pillow | Wallpaper

Another item we parted ways with was their 6 cube bookshelf that we’ve also had since Conner’s nursery days (8 years ago!). We wanted something for books and more storage and opted for this shelf on the opposite side of their beds. It definitely isn’t a great space saver, but we figured the wall that it is on is more for entertainment and just housed their Big Joes, it wouldn’t be a huge issue. As they get older, they’ll need more storage space for their needs and interests so we went for it. They’re able to keep their soccer gear, extra smaller toys, headphones, their entire book collection and some knick-knacks on it. We bought them this fan and C installed it. I looooved their old light which was really inexpensive and cool looking, but as they’re getting older we figured they could use more air circulation 😉 I wanted something unique and not the standard, traditional fan. This one has the blades inside, and it also goes with the SW theme again with the constellation looking decorations on the outside. It has a remote and they think it’s pretty neat too. Definitely cools the room down as well!

We kept their floating shelves, some of the wall art/frames, and curtains. The frames we kept I printed art from one of my favorite small shops, Neverland Crew. If you’ve been following me, you know we are HUGE NCC fans and my kiddos have worn their their awesome pop culture inspired tees for years. What you may not know, is they also have an entire ‘home’ collection, which is where I grabbed this Vadar + Storm Trooper canvases from as well as the boys ‘dark side’ engraved. nightlight’. Check them out and support an amazing small, family owned and operated business!

I hope you enjoyed the refresh/makeover we gave the boys’ room and it inspires you to change up a space in your home! We definitely took our time planning and purchasing things which made it so much easier when it was time (months later) to put our plan into action! Now…to tackle the next room! 😉

DIY 1st Ultrasound Frame

October 5, 2021

This one really doesn’t take too much “DIY” or creativity, and is pretty basic, but a sweet way to display your first baby’s first ultrasound.

(TW) You may (or may not) know, I have 4 children here but carried 5 babies. There’s not a month that goes by that I don’t think of who that sweet little baby would be today, and during that difficult time I knew there would be a day where I wanted to still honor him/her in our home. Many months later, I found a way to do this that felt very peaceful and special to me, as well as joining them with the rest of our family.

I decided to buy these frames and create a space for them on a wall of our home. In them, I decided to fill each with a photo of all of our baby’s first ultrasounds.

To make it a little “DIY” and spruce it up, I used different patterned washi tape to add to adjacent corners before putting the frame back together. The washi tape really does make them pop!!

I uploaded a reel to my IG where you can see the process, but even without that I hope you found this super simple and inspirational!

Here’s how they’re displayed in our home today 🙂

What an incredible opportunity to go (live!!!!) on What an incredible opportunity to go (live!!!!) on @arizonasfamily yesterday! 🎥✨

We were able to share some of Colly’s story along with our fundraiser with @picazzositalian that’s supporting Colly’s pediatric therapy clinic, @bloomkidz_az 💚 In April, $1 of every dessert sold at all 6 stores is being donated here. We are so grateful to be able to give back to such an incredible organization that’s been monumental in Colly’s progress and unwavering in support to our family the last 2.5 years.

Thank you to @cerretanews for taking the time to chat with us and to @elainavpr for always advocating for our family so generously and in such a special way!! 🤍

Colly works so hard 🙏🏻 At age 4 and by this Colly works so hard 🙏🏻
At age 4 and by this stage of this savage disease, eating by mouth (chewing and swallowing) plus gaining (and even maintaining) weight is extremely difficult. Additionally, most girls cannot use their hands for anything with purpose at this time as well 💔

Please join us in praying that Colly will continue to have hand strength + the ability to use them, that she can tolerate eating by mouth, that she stays seizure AND med free, and that she continues to grow and gain weight. Thank you friends!!! 🫶🏻 Forever grateful for this community who encourages and cares about us.

Just received this video from Colly’s PT 2 days Just received this video from Colly’s PT 2 days ago and have already watched it on repeat about 100x 🥹 The squeal of joy is something we don’t take for granted when much of her short life has been consumed with crying, anxiety, pain, and frustration. She genuinely seems so happy and joyful 🥹😭

Also can we also just take a second to acknowledge how much motor planning and brain power it takes to repetitively jump up and down like this?! THAT’S OUR GIRL!!!!! 💪🏻🧠✨

We believe in the power of prayer and humbly ask everyone reading this to please keep praying for her. I will always desperately want more for her, and I am believing in His perfect timing that it will happen.

This is long, but worth a watch!! Colly has been a This is long, but worth a watch!! Colly has been absolutely CRUSHING Rett Syndrome this past month. Literally saying, “Rett who?!?!” 🤯🤗👊🏻 November we witnessed so many miracles happening for Colly. It wasn’t without some bumps, but we have SO much to be thankful for.

By age 3.5 (she’s so close to 4 now!), most girls with this disease no longer have purposeful use of their hands. Every day she’s able to still use them in any capacity is a miracle, but the fact that she’s doing even more beyond that…is almost unbelievable. 🥹 She is not doing what medical text says she should at this stage of the disease.

We wouldn’t be where we are today without her massive team at @bloomkidz_az where she receives 5 different therapies M-F full time, and the last couple of months adding in weekly appointments with @dr.connerbor. The impact all of these treatments are having on her is huge, and at this point, essential to her development and continued progress.

It’s so exciting to be able to post happy + encouraging updates about Colly after so much darkness, sadness, and confusion. Please pray we are able to keep her on this stable track of good health, pray for her team to have the wisdom they need to continue to help her, and pray for even more strength for her body and brain! 💪🏻🧠✨ We can’t thank you enough for cheering our family on as our sweet little girl continues the fight of her life.
The most healing Halloween + diagnosis day yet 🕊️

It’s not a secret that I still carry a heavy grief over Colly’s life. Ultimately, the prognosis of Rett is very dark but seeing her progress since she was diagnosed is nothing short of inspiring. We have so much hope for her future and although there is still much uncertainty, she has an amazing team of therapists, doctors, and supporters. She has treatment plans and goals. She has a family who loves her and will never stop pushing for more for her.

I was telling a friend recently that this day will always be a reminder of the ending of the dreams/life I saw for her, but how can I wallow in sadness when there is so much joy? Colly IS that joy ✨🪽

God has revealed a lot to me these last two years and has pulled me out of a really scary pit. He’s wiped my tears, softened my heart, and given me strength to be a better mom, caregiver, and person for Colly + my other children. Instead of dread, my excitement for life is returning and I can’t wait to see where we’ll be next Halloween 🤍

Finally sharing the small update I did earlier thi Finally sharing the small update I did earlier this year in Colly Girl’s room! I used a wall stencil from Amazon + the colors are Snowbound and Warming Peach by @sherwinwilliams for the paint 🤩

I’m personally obsessed with how it came out!! More details on my blog tonight (link in bio)! ☀️🧡🧸☁️
We are beside ourselves and elated 😭😭 If you We are beside ourselves and elated 😭😭 If you are new here, Colly had a handful of words before her second “Rett Regression” in 2023 where she lost them all and went completely silent. A few of those words returned this year with the regression ending (praise the Lord) but “Dad” was never one of them.

She had said “ddddaaaa” in January of this year but not much came after that. Fast forward to the end of this month, and now when we ask her to say it on command - she seemingly is doing just that 🤯🤯🤯🤯🤯🤯🤯 Absolutely blown away. I swear she’s even saying, “eeeee” at the end a few times as if to say “daddy”!

We were told Colly would never verbally communicate amongst so many other heartbreaking (and a slew of other WAY MORE terrifying) things that accompany this disease. Honestly, verbally talking fell off of our wishlist a long time ago because we’ve seen her face many other struggles that make every day life so much more challenging for her. My hope has been renewed lately and I’m adding it back onto my dreams for her. 💫☁️ I know she will likely never verbally speak in sentences, but to have a few words would be incredible and I’m sure would do wonders for her anxiety and frustration levels as well.

Only 3 ingredients and so simple, but I did list the “how to” on my blog (link in bio!) 🍉🍧💚
So much can change in one year 🥹❤️‍🔥 So much can change in one year 🥹❤️‍🔥

In June 2023, we were 7 months into a devastating diagnosis - which would be Rett Syndrome, a rare neurological disease that is a whole body disorder and affects every single thing the body does for us voluntarily. We were told Colly may never walk, she would face severe motor challenges, have so many limitations of her life, and worst of all, a shortened life span. She was also in the midst of her Rett Regression, which is where children rapidly lose any acquired skills they DO have (basic things - like using their hands and swallowing food). It also causes so many issues with mood, breathing, sleep, and much, much more. The only way to put it is non stop suffering, and absolutely gut wrenching.

One year later and I think we can say Colly is out of her regression and new skills are emerging. In June of 2023, she was just learning to tolerate more time standing up and attempting assisted steps with a walker and bearing weight on her feet. Her mood has improved so much by gaining this independence of walking where she wants and she seems so much more stable.

“Believing gets hard, when options are few” has never felt so real in my life. I am pretty sure I was circling the drain and at the bottom of the bottom in June 2023. Life was so hard, DEPRESSING, scary, and uncertain. I refuse to give up on God though, because He doesn’t give up on me. While we know Rett is a savage beast, we are believing Colly will continue to defy the odds and she WILL keep surprising us 🥹💫 If you asked me last year if she’d be walking next June, I’d probably try to sound hopeful but I would tell you it was maybe *hopefully* going to still happen in a year or two. AND LOOK AT HER GO!!

If you are in your circling moment, just hang on. Miracles happen every day, EVEN IF it’s not in the way you or I pray about. I know the author of Colly’s story is STILL writing a beautiful one, so I’m going to trust and hold onto that.

With today being #rarediseaseday, it felt very rig With today being #rarediseaseday, it felt very right to share this now. In the beginning of January, we had the opportunity to discuss one of the first pediatric gene therapy trials for Rett Syndrome happening NOW in the USA!! It is a very exciting time and we are cautiously optimistic about our daughter, Colly, having the chance to receive this life saving treatment.

We were also so thankful to chat about our fundraiser with @picazzositalian which donates $1 of every chocolate chip cookie dessert sold to @rsrtig (which is the only foundation solely dedicated to the cure) and how raise awareness about how this devastating disease has impacted our sweet girl and so many others who are suffering from it.

We need this cure!! Without it, Colly will continue to struggle for life’s basic necessities - BREATHING, eating, sleeping, walking, talking and using her hands. Rett is a severe neurological disease that affects every aspect of her life, everything our brain tells our bodies to do for us is disrupted for a girl with Rett Syndrome.

Full video is in the link in my bio if you’d like to watch more! BIG thank you to @elainavpr for facilitating this for us, and to @arizonasfamily for allowing us to share 🤍

My kids’ birthdays have ALWAYS been emotional fo My kids’ birthdays have ALWAYS been emotional for me. I cry every year on the day that they turn a year older. That reality hits so much harder with Colly, and the fragility of her life. The “bittersweet” of a new year: what it symbolizes and how time moves on for others, but it really doesn’t for Colly. I’m really trying to still be grateful, even through all of the hard. I just wish things were easier for her. I have to keep trusting that God’s plan is so much bigger and better than mine.

I love you, my angel, Sweetpea Girl 💗 Happy 3rd Birthday.
