Disney's in the Desert

Homemade Coffee Cake

This one definitely requires a little more work + time, but I promise ya, it’s so worth it!!

Ingredients

For cinnamon layer:

1/3 c granulated sugar

1 tbsp flour

1/4 tsp cinnamon

For streusel topping:

1 c brown sugar

1 /2 c butter (softened)

1 c AP flour

1 tsp cinnamon

1/4 tsp kosher salt

For cake batter:

3 c AP flour

2 c granulated sugar

1/4 c brown sugar

2 c granulated sugar

3/4 tsp baking powder

1/2 tsp baking soda

1/2 tsp kosher salt

1 c butter (softened)

1/4 c whole milk

1 c sour cream

4 eggs

1 1/2 tsp vanilla extract

Directions

Preheat oven to 350.

FOR THE STREUSEL: in a bowl combine combine all ingredients. Use a fork to mash everything until crumbly. Set off to the side.

FOR THE CINNAMON LAYER: in a small bowl, combine all ingredients. Set off to the side.

FOR THE BATTER: add flour, sugars, baking powder + soda, and kosher salt in a mixing bowl, stir to combine. Add softened butter and beat on medium speed for 2-4 minutes. In another bowl, mix together sour cream, milk, eggs, and vanilla. Mix to combine, and then add this to the dry ingredients. Beat until well combined and you have a smooth batter.

Take a greased dish (I honestly just use a larger casserole/baking dish!) and add half of the batter to it. Next, sprinkle the cinnamon layer mixture. Next, spread remaining batter over the top of the cinnamon mixture. Finally, add your streusel crumble mixture to the top.

Bake for 50-60 minutes, let cool for 1 hour before serving. Enjoy!

Mom Hack: How To Untangle Hair From Jewelry

Disclaimer: this is from my experience/perspective with gold FILLED (NOT plated) jewelry. Please use at your own risk/discretion, I can’t say it will work or be effective for all types of jewelry.

Hun has been taking such good care of her little Amazon jewelry items I’ve gotten her over the last 2 years (just gold plated bracelets and necklaces) that for her 5th birthday this year, I decided to buy her a big girl necklace from my good friend’s amazing jewelry company. She actually had a choker from Lise that she wore for the longest time (it was mine that she ‘borrowed’ lol and ended up being so cute on her, I let her keep it) but this problem that I’m about to get into happened, and then my husband took matters into his own hands and the result did not end well. I knew this would probably happen again, and it’s no fault or issue with the quality of the necklace, she just has long hair that gets tangled. Since she can wear this in the shower, pool, etc. she doesn’t ever take it off and then the hair seems to keep getting twirled into it, piling up along the back.

So back to what C did last time, lol, he decided to take a lighter and burn the hair out. Worked great, but it ruined her necklace 🙁 So this time I was determined to not let him do that again and find a better way that wouldn’t do damage to it.

I did some research and found that others have had good success with using Nair to get the tangled/pulled out pieces of hair out without ruining the jewelry piece itself. I gave it a try last week and was WOW’d!!!! I followed exactly what the directions on the bottle said (do not let it sit for more than 3 min – which I was wondering would that be too long? Because a piece of jewelry and a leg are two very different things, haha) but I didn’t have any issues or tarnishing.

It removed the hair like a dream and her necklace was looking brand new + still sparkling like the first day it arrived!!! All of the hair that was so tightly wrapped around this pretty little thing came right off and basically disinigrated. I used a paper towel (but you could use a cleaning/jewelry cloth, I just didn’t have one close by) and gently rubbed the remaining hair pieces out of the loops.

So that’s it! Just grab a bottle of Nair and it basically does all of the work for ya! I thought I would share this for other women/fellow moms out there who might deal with this at some point and hope it helps!

Is it just me or did this summer just fly right on by? We are now already heading into week FOUR of school, and I think that’s even more unbelievable! Can time just slow down a teeny tiny bit?!

We are so thankful our BabbleBoxx got here in time for the first day! I’m going to walk you through of what goodies are inside and how we’re enjoying and using them during the start of the new school year.

Yipes! Wipes

My three older kids are really great about cleaning up for the most part, but I still have to remind them to run to the bathroom and wash up after they’re done eating or remember to use a napkin. What’s tough about both of those scenarios is there usually is still some sort of mess left behind. I am seriously so pumped to find Yipes! because they are 98% water (plus Vegan and good for the environment since they’re compostable!) so they’re able to get whatever is on their hands/faces removed since they are individually wrapped wet wipes. Since adding Yipes! to our home, they know to get one when they want to grab a snack so they have something to clean themselves afterwards. I love that it promotes taking the initiative to take care of themselves, on their own. Any effort like this is really appreciative to any busy parent who wants their kids to implement healthy habits! Bonus: they’re easy to open and even my newly turned 5 year old can open the packaging by herself.

Stride Rite

I swear, there has to be some kind of record for how fast my kids outgrow their shoes every couple of months, do any other moms feel the same?! We all know back to school shopping would not be complete without some new, well fitting kicks! Honey picked out these Stride Rite Light-up Glimmer Sneakers (I’m pretty sure the name alone describes our girl to a T!) to start kinder at her new school!! They are so fun and she loves that with each step (and jump!) the light up outsole displays brightly. The inside of these cuties also are made of memory foam, so I know she is comfortable and supported throughout the day. She’s able to independently put them on every morning thanks to the easy oversized on-off opening the shoe features. Heroes of Goo Jit Zu

When the boys get home from school, I make sure they have some free play time since they’ve just been at school working hard for 7 hours. These Heroes of Goo Jit Zu Goo Shifters packs have been an interactive and engaging way for them to play together once they’re done with school for the day! If you’re new here, our boys actually participate in Jiu Jitsu 3 nights a week, so these squishy heroes are definitely right up their alley!!!! Standard Process Children & Adult Supplements

A huge concern for me with the kids going back to school every year is germs. I know it’s something that’s going to happen but if I can do my best to keep them at bay by supporting our immune systems, then I’m going to do just that! I just want to share that we are watching a miracl I just want to share that we are watching a miracle… which is the story of Colly’s life - right before our eyes 🥹🥲 Colly has Rett Syndrome, a rare and severe debilitating neurological disorder. For her current age, and the progression of the disease in her body - it’s truly mind blowing to witness her hitting BIG goals and overcoming huge feats. God gets all of the glory in this and we know with Him, all things are possible. Every day we are believing for more miracles for her… not just the big ones, but the small, seemingly insignificant ones that make such a difference in our lives. 

The determination and will this sweet girl has is so inspirational 🥹 She works so hard, thru tons of pain and struggles, every single day. Literally every hour of the day. Our older kids affectionately call her “the GOAT” - because she really is! 🐐🏆

I’ve recently had an influx of messages from parents just receiving this horrible, terrifying diagnosis. It can feel like a nightmare, and so overwhelming… there’s nothing to sugarcoat with the challenges in navigating this. But what I also want to say, is… don’t lose HOPE. Keep exploring every option out there, keep pushing for more (of everything — including answers, therapy, outside of the box ideas, etc). Your daughter will surprise you!!! There’s so much goodness still in store. Ultimately, God is still writing a beautiful story for her life. It’s filled with purpose and joy.

Today on the blog I am sharing my bedroom refresh! Today on the blog I am sharing my bedroom refresh!! After Colly’s diagnosis and a really hard season of life, this room slowly turned into a dark dungeon and a sad place for me. With feeling emotionally better these days (therapy + joining a grief group), I’ve decided to reclaim this space and let the light in again ✨ 

I also wanted to add some neutral colors, natural tones, and cozy textures to make it feel comforting. My goal was to make this little area my sanctuary to reset and *rest*. There’s a few spots to sit and enjoy some peace, too!

The whole room really comes together beautifully with the addition of my new King size @beddys! Truly a game changer as a parents of 4. We can tidy the whole room with just a quick zip! Happiest Birthday to the OG Honey Girl 🍯🎈🎂

She’s made our lives SO much sweeter 🥹 It’s truly an honor and privilege to have a front row seat to her childhood, though I’m forever wishing time could slow down just a 🤏🏻 bit. Soaking it up and cherishing each stage we reach because I know it goes quick!!!

I have so many prayers for her for this next year. My biggest one though is that she continues to seek Jesus. I am believing that she will keep Him first and that His hope + joy carries her thru any and every challenge.

How was this already over a month ago?! 🤯 Time How was this already over a month ago?! 🤯 Time is flying. I couldn’t skip over sharing about the last appointment with my girl, the curl queen herself, @lustrae_!!! ➿🩵 

We have been working for the last year to get my color to the ✨blonde of my dreams✨! We’re pretty much there and I’m obsessed!!! Did a little trim too to hopefully keep it growing (the length is there but shrinks up a ton bc of the curl). 

If you’re a local curly, you need to book with Lex!! I’ve had this hair for 30+ years now and am still learning new things thanks to her incredible tips and help! She will work magic on your curls and literally just the sweetest person ever!!! 🪄👑✨

We are so grateful to be able to give back to such an incredible organization that’s been monumental in Colly’s progress and unwavering in support to our family the last 2.5 years.

At age 4 and by this stage of this savage disease, eating by mouth (chewing and swallowing) plus gaining (and even maintaining) weight is extremely difficult. Additionally, most girls cannot use their hands for anything with purpose at this time as well 💔

Please join us in praying that Colly will continue to have hand strength + the ability to use them, that she can tolerate eating by mouth, that she stays seizure AND med free, and that she continues to grow and gain weight. Just received this video from Colly’s PT 2 days Just received this video from Colly’s PT 2 days ago and have already watched it on repeat about 100x 🥹 The squeal of joy is something we don’t take for granted when much of her short life has been consumed with crying, anxiety, pain, and frustration. She genuinely seems so happy and joyful 🥹😭

Also can we also just take a second to acknowledge how much motor planning and brain power it takes to repetitively jump up and down like this?! THAT’S OUR GIRL!!!!! 💪🏻🧠✨

We believe in the power of prayer and humbly ask everyone reading this to please keep praying for her. I will always desperately want more for her, and I am believing in His perfect timing that it will happen.

This is long, but worth a watch!! Colly has been a This is long, but worth a watch!! Colly has been absolutely CRUSHING Rett Syndrome this past month. Literally saying, “Rett who?!?!” 🤯🤗👊🏻 November we witnessed so many miracles happening for Colly. It wasn’t without some bumps, but we have SO much to be thankful for. 

By age 3.5 (she’s so close to 4 now!), most girls with this disease no longer have purposeful use of their hands. Every day she’s able to still use them in any capacity is a miracle, but the fact that she’s doing even more beyond that…is almost unbelievable. 🥹 She is not doing what medical text says she should at this stage of the disease. 

We wouldn’t be where we are today without her massive team at @bloomkidz_az where she receives 5 different therapies M-F full time, and the last couple of months adding in weekly appointments with @dr.connerbor. The impact all of these treatments are having on her is huge, and at this point, essential to her development and continued progress. 

It’s so exciting to be able to post happy + encouraging updates about Colly after so much darkness, sadness, and confusion. Please pray we are able to keep her on this stable track of good health, pray for her team to have the wisdom they need to continue to help her, and pray for even more strength for her body and brain! 💪🏻🧠✨ We can’t thank you enough for cheering our family on as our sweet little girl continues the fight of her life.
The most healing Halloween + diagnosis day yet 🕊️

It’s not a secret that I still carry a heavy grief over Colly’s life. Ultimately, the prognosis of Rett is very dark but seeing her progress since she was diagnosed is nothing short of inspiring. We have so much hope for her future and although there is still much uncertainty, she has an amazing team of therapists, doctors, and supporters. She has treatment plans and goals. She has a family who loves her and will never stop pushing for more for her. 

I was telling a friend recently that this day will always be a reminder of the ending of the dreams/life I saw for her, but how can I wallow in sadness when there is so much joy? Colly IS that joy ✨🪽

God has revealed a lot to me these last two years and has pulled me out of a really scary pit. He’s wiped my tears, softened my heart, and given me strength to be a better mom, caregiver, and person for Colly + my other children. Instead of dread, my excitement for life is returning and I can’t wait to see where we’ll be next Halloween 🤍

Finally sharing the small update I did earlier thi Finally sharing the small update I did earlier this year in Colly Girl’s room! I used a wall stencil from Amazon + the colors are Snowbound and Warming Peach by @sherwinwilliams for the paint 🤩

We are beside ourselves and elated 😭😭 If you We are beside ourselves and elated 😭😭 If you are new here, Colly had a handful of words before her second “Rett Regression” in 2023 where she lost them all and went completely silent. A few of those words returned this year with the regression ending (praise the Lord) but “Dad” was never one of them. 

She had said “ddddaaaa” in January of this year but not much came after that. Fast forward to the end of this month, and now when we ask her to say it on command - she seemingly is doing just that 🤯🤯🤯🤯🤯🤯🤯 Absolutely blown away. I swear she’s even saying, “eeeee” at the end a few times as if to say “daddy”! 

We were told Colly would never verbally communicate amongst so many other heartbreaking (and a slew of other WAY MORE terrifying) things that accompany this disease. Honestly, verbally talking fell off of our wishlist a long time ago because we’ve seen her face many other struggles that make every day life so much more challenging for her. My hope has been renewed lately and I’m adding it back onto my dreams for her. 💫☁️ I know she will likely never verbally speak in sentences, but to have a few words would be incredible and I’m sure would do wonders for her anxiety and frustration levels as well.
