You know I’m all about the easy recipes for my family! Here’s another- hope it inspires you to cook for your family this week!
I make this probably every other week because it’s inexpensive, simple to make, and not a ton of ingredients! My kids eat it really easily too so that’s also a huge win for me.
Ingredients
1 bunch of basil (I use about 3 or 4 big leaves and maybe 2 or 3 smaller ones – just as garnish!)
Salt + pepper (eyeball)
16 oz package of gnocchi
8 oz package of mozzarella cheese balls (in water, drained)
Extra virgin olive oil (eyeball, to drizzle)
10 oz tomato medley (mixed red, yellow, green)
5 oz of grape tomatoes
1/4 c parmesan
Directions
Cook gnocchi for 3-ish minutes so they’re cooked through but not mushy.
Strain them and place them on a large greased sheet pan. Add all tomatoes around gnocchi on pan.
Add salt and pepper, then drizzle olive oil lightly across everything on sheet pan. You’ll want to make sure you do touch everything with the EVOO but don’t over do it and go overboard.
Bake in oven at 400 for 10-12 minutes, remove from oven and add the cheeseballs (drained) around the tomatoes and gnocchi. Add a little more S + P and basil and parmesan on top. Serve immediately. Enjoy!
