Ingredients
•1 lb gr beef (lean)
•1 lb gr sausage (mild)
•1 c breadcrumbs (I like Italian)
•1 egg
•1/4 tsp chili powder
•1/4 tsp onion powder
•1/4 tsp garlic powder
•2 tsp minced garlic
•2/3 c diced white onion
•1/4 tsp pepper
•1 tsp salt
Spray the inside of your crockpot with nonstick cooking spray. Mix all ingredients together at once. I will use a curved spatula to mix everything then toward the end I’ll use my hands to really incorporate it all together. I use a tbsp measured to scoop the meat – I do a “heaping” tbsp. This just helps me get an idea of the size so they’re all uniform. Then roll it into a nicer shaped ball. Add each to the inside of your crockpot until meat is gone. They will kind of look like mini golf balls.
I *do not* cover them with any extra sauces. I just let them cook as is (they will release their own juice/sauce from the sausage!) Cook on high for about 3 hours. Around then, check them (my crockpot heats up really well/fast) so at that mark, if they’re not cooked through, you can set it to low and let them cook another 30-45 min.
These are great for appetizers, meatball sub sandwiches, or in pasta bakes/casseroles! Lots of ways to dress them up or down. Cole LOVES meatballs and will just eat them plain!
We’ve also been in a time crunch in the last few months and I’ve made them in the oven. So instead of slow cooking them for 3-4 hours I will throw them in the oven at 400 degrees for about 25 minutes or so and they come out just as delicious! My husband actually prefers them this way.
