We are in a season of life that has us running back and forth between school, sports, youth group activities, and physical therapies for our 4 children – which has been BUSY, to say the least! Any time I can find ways to cut down time in the kitchen when feeding my family on the go, I am all about!
Lately, we’re really needing quick snacks while we are to and from weeknight practice. Our 3 older kids do Jiu Jitsu several nights a week, and they need something that’s fast and also not too heavy before they go and roll around on the mat for a couple of hours. I love making my Jalapeño Rice Bites for them for this time of day, and I can easily slash my time in half by using Minute Jalapeño Rice Cups! Assembling them takes about 5 minutes, I can make them ahead of time too and store them in the fridge and then just heat them up when we’re about ready to hop in the car, which I love as a busy mom!

Ingredients
2 TBSP Cream Cheese
1 TBSP Diced Fresh Jalapeño
2 Eggs
1 C Diced Yellow Onion
1 C Shredded Colby Jack Cheese (or your favorite shredded cheese!)
Directions
Preheat oven to 350. Heat rice cups in the microwave as directed on package. Let rice fully cool. Once that is done, add in your onion, jalapeno, cream cheese, shredded cheese, and egg. Mix until well combined. In a lightly greased muffin tin, add about 1 TBSP of the mixture to each tin. Bake for about 15-20 minutes until golden brown. Remove from oven and let cool for 5 minutes and then remove them from the pan. Enjoy!
