You know when it’s named after a kid, it’s a fave! Lately we’ve been going thru our family recipes to compile and bring back our favorites more often, and with that has come the topic of naming them. Each of our kids have their faves, so we’ve lovingly switched some of their ‘formal’ titles to include “____’s Whatever The Food Is” – and they love this. I remember my mom doing something similar with my sisters and I growing up and it was special.
So with that said, I present to you “Honey’s Tomato Soup” (and easy croissant “grilled cheese” to go along with it!) This is an Instant Pot meal, so make sure you have yours ready! It also requires blending the soup, so I recommend a hand or immersion blender (or you can use your regular blender but it’s a little messier + more dishes!)
Ingredients
2 c chicken or vegetable broth (I’ve made it with both, and just often go with whatever I have on hand in my pantry. Both are delicious!)
1/2 chopped yellow onion
3 tsp minced garlic
2 tbsp olive oil
2 cans of 28oz diced tomatoes
2 tbsp granulated sugar
6-7 fresh basil leaves (chopped) plus a few more to garnish
1 tsp salt
1/2 tsp pepper
1 c heavy cream
Parmesan to garnish (optional)
1 8 oz can of crescent rolls (regular, not buttered)
4 slices of cheddar cheese
Everything Bagel seasoning (optional)
Directions
Turn your Instant Pot on to saute mode and add the olive oil and chopped onion. Cook, while stirring, for about 2 min until flagrant. Add garlic and cook another 1 minute. Add broth to deglaze bottom of your IP and then add in canned tomatoes, basil, sugar, salt, and pepper. Add the lid to the IP and set it to pressure cook for 8 minutes.
While this is cooking, you can start assembling the “grilled cheese”. Remove your crescents from the tube and lay on a baking sheet that is lined with parchment paper. Cut all of the cheese slices in half and add one to each crescent roll. Roll them up, and brush on a little bit of butter or olive oil (I prefer olive oil). Then top with Everything Bagel seasoning. Bake for about 10 minutes or until the cheese is melted and rolls are golden.
Once the 8 minutes are up on the Instant Pot, do a quick release and remove the lid. Blend soup with immersion blender until everything is smooth. Add in your heavy cream and stir everything together. Garnish (optional) and serve with crescent roll grilled cheese immediately!
