I love this, because it’s easier for me than grilling! Also, only 2 pieces of cookware are used — yay for less dishes!!
Ingredients
Quality 3lb chuck roast
1 c baby carrots
2.5 lbs potatoes (cubed)
2 c beef broth
1/2 tsp dried chives
1 tsp parsley
1/4 tsp dill weed
1/4 tsp paprika
2 tbsp Worcestershire sauce
2 tbsp taco seasoning
2 tbsp ranch seasoning
Salt and pepper to taste
1 onion (chopped)
Directions
In a large skillet or Dutch oven over with olive oil medium heat, take your seasoned roast (I like to do a little salt, pepper, Italian seasoning, garlic powder, and onion powder) and place it in for about 2-3 minutes until brown on all sides. Remove from pan and add to your crockpot. Add veggies + potatoes then the broth, Worcestershire, and other seasonings over everything. Add taco and ranch seasoning as well as salt and pepper. Cook on high for 4-5 hours or low for 8-9. Serve with a green salad or vegetable!
