Chickies…and roosters, let’s go!! This is such a cute treat for not only Easter, but Spring itself!
You can absolutely make these fully homemade with your own cake mix + frosting, but right now I am in “convenience mode” as I juggle my home (mostly alone with my husband’s crazy hours), working full time, and my 4 kids. So box cake and store bought frosting it is!!
Ingredients
5 oz coconut flakes (toasted – which is explained below)
Boxed butter cake (or whatever you use to make your own cake)
Lemon frosting
Cream cheese frosting
Chocolate chips
Red, yellow, and orange chewy candies (something like Starbursts)
Directions
Bake your cupcakes to the instructions on the box (or use your recipe). TIP: Let them fully cool before you ice or decorate anything! I like to wait at least two hours.
For the toasted coconut, set your oven to 375 and bake for about 8-9 minutes until you see them brown up just a bit. You definitely don’t want them to burn so just keep an eye on them as they’re toasting! You’ll also want this fully cooled before you begin decorating.
I did 6 lemon frosting (yellow for the chicks) and 6 cream cheese frosting (white for the roosters). Cut your chewy candies in half (diagonally) for the combs and yellow beaks. For the orange ones, I cut off the corners to make smaller triangles. Once you have the cupcakes frosted, roll the edges in the toasted coconut – these are the ‘feathers’! Add the chocolate chips, and the cut chewy candies for the beaks and combs. It really doesn’t take much and makes the cutest after dinner dessert for little ones! It would also be a fun idea to bring to your Easter gathering with friends and family.
