I know this recipe comes a day late (hello, Thursday!) but hopefully it gives you an idea for a busy weeknight or when you’re just not sure what to make!
Ingredients
One jar of pizza sauce (you won’t use the whole thing!)
Mozzarella cheese (probably a few tablespoons – I just buy a small 8 oz bag or I grate my own)
1 tube of refrigerated biscuits
Sliced pepperoni
Topping: Butter, parm, garlic salt, pepper, and/or Italian seasoning
Directions
Preheat oven to 375.
Separate the biscuit top and bottom of each biscuit and place on a parchment lined baking sheet. Add a small spoonful of pizza sauce to each biscuit and top with a pinch of mozzarella cheese and one pepperoni.
Pinch together the top and bottom of each biscuit half and “seal” it. Form it into a ball with the palms of your hand. Then add the topping (combine everything and microwave for a few minutes) by brushing on each little bomb. Bake for 15-18 minutes.
Optional: top with fresh parsley or basil. Add a little side of the pizza sauce to dip if preferred. Enjoy!
